Warm Lemon Pudding Cake - 52 Cakes and Pies at Home

WOW Do I love this recipe.

Has the illusion of something special while being beyond belief easy to make.  Convert a boxed cake mix and a couple of boxes of pudding mix and BINGO BANGO BONGO, you have a large casserole version of the restaurant classic LAVA CAKE.

Serve warm for a delicious treat on a cool summer night.

I like to have this just about ready to bake just as guests arrive for a dinner party.  By the time everyone is ready for dessert, this is popping out of the oven and the memories of the  Oooohs and Aaaahs from family and friends will make you smile as you clean up from the party!

OK... Here's what I did...


Warm
Lemon Pudding Cake


Ingredients
  • 1 Package Lemon Cake Mix (Plus the ingredients called for on the cake box)
  • 2 Packages Instant Lemon Pudding
  • 1/3 Cup Sugar
  • 2 Cups Cold Half and Half (Can use Whole Milk)
  • 1-1/4 Cups Water
Cooking Directions
  1. Preheat oven to 350 degrees
  2. Prepare the cake mix as directed on the box. Pour and spread this mix into a greased large 9X13 casserole pan.
  3. Whip together the Pudding mixes, Sugar, Half and Half and Water. Whisk for 2 minutes until completely integrated.
  4. Drop heaping Tablespoons of the pudding on top of the poured cake mix. Evenly drop the mix around the cake pan but DO NOT SPREAD the pudding.
  5. Bake 1 hour or until toothpick can be inserted and comes out clean.
  6. Cool for 20 minutes.
  7. Serve WARM with a glass of Cold Milk and ENJOY!
