Elote - Mexican Grilled Corn on the Cob - Grilling Time Side Dish

It's Old School and simple on the grill...

Yesterday I posted a really terrific Hamburger, the Summer Tomato Burger.  This is what I served as a side dish.

Elote is a common Mexican street vendor food.  the corn is boiled and customers add a variety of toppings.  I decided to grill mine (since I had the grill fired up for the burgers), but the idea is basically the same.  I was doing a couple of hours of prep work for a big end of summer BBQ I was hosting for Labor Day.  This quickie side dish was perfect for a fast grill session.  The whole meal was done in about 15 minutes!

And of course, DELICIOUS!


OK... Here's what I did...


Elote - Grilled
Mexican Corn on the Cob


Ingredients
  • 4 Cobs of Corn
  • 1/2 Cup Mayonnaise
  • Zest of 1 Medium Lime
  • Juice of 1 Medium Lime
  • 1/2 Cup Cotija Cheese, grated
  • Optional, Cayenne pepper to taste
Cooking Directions
  1. 30 minutes before you start to grill, remove husks and hair from the corn, soak in cold water up to 1 hour.
  2. Over direct medium heat, put corn on the grill, turn 1/4 turn every three minutes.
  3. Meanwhile, mix the Mayonnaise and the juice of a lime.
  4. After 12 minutes, the corn is cooked through and grill marks have formed on the corn. Generously spread 1/4 of the mayo/lime mix on the hot corn, covering evenly
  5. Garnish with the Lime Zest, Grated Cheese and optional pepper spice.
  6. Serve HOT and ENJOY!
